Start by spreading the lard on the bottom of a heavy-based pot. 2. Then simply layer in the pork, salt, peppercorns, garlic and bay leaves. 3. Pour over the vinegar and water. 4. Place it on medium heat with the lid off for 20 minutes or until the vinegar pungency has reduced. 5. Then place the lid on, turn to low and cook for 2.5 hours. Note, there should be no need to stir during the cooking. 6. Once cooked, crack the lid and turn the heat off and let it cool completely before placing it in the fridge overnight. 7. To serve, heat a large cast iron pan over high heat and add the pork, cook until you have a nice colour, serve over rice with pickles and enjoy! Recipe Adobo Seca Worth noting that one of the main differences in this type of adobo is the use of fish sauce instead of soy sauce. I didn't use fish sauce in my recipe because the pork was already very well seasoned with salt. If you do want to use fish sauce, simply take your raw pork belly and cook it in water, season it with a small amount of vinegar and fish sauce, simmer it for 1-1.5 hours or until it's tender before completing the steps below, and finally finishing it with more fish sauce if it needs more salt. Ingredients - 1 tbsp lard - 800g cooked pork, using either the recipe above OR cooked in water, fish sauce and vinegar like in the intro of this recipe. - 20 cloves garlic, finely diced - 1 tbsp achuete (Annatto) seeds soaked in 1/2 cup hot water for 1 hour - 2 tbsp coconut vinegar Method 1. Add the lard to a wok or large frypan. 2. Add the garlic and cook for 2-3 minutes before adding the cooked pork. 3. Now, add the vinegar and liquid from the cooked annatto seeds. Stir well and simmer for 10-15 min for the vinegar to burn off. 4. Once cooked, serve over steamed rice.

RECIPE: ↓👇🏻 My version of chicken adobo recipe.It is simple to make & famous.The perfect adobo lies in delicate balance of soy sauce, vinegar, bay leaves & peppercorns.Hope you try this recipe at home. Ingredients: 1 whole chopped chicken 6 cloves garlic 1 large onion 2 bay leaves peppercorns 1 tsp salt 1 tsp ground pepper 1/4 cup vinegar 1/4 cup soy sauce 1/2-3/4 cups water 1 Tbsp brown sugar 1 Tbsp cornstarch INSTRUCTIONS: Place a medium pan on a med-high heat & add the oil, once the oil is hot, saute the chopped onion until translucent then add the garlic. Then add the chicken. Season with salt & pepper. Stir fry for about 2-3 minutes until the chicken changed color. Add the soy sauce, peppercorns & vinegar. Let it simmer for about 4-5 minutes on high heat. Then add the brown sugar. Stir occasionally. Next, add 1/2-3/4 cup of water. Let is simmer for another 3-4 minutes on high heat. Pour the cornstarch mixture to slightly thicken the sauce. If the sauce is too thick you can add a little bit of water. Donate to No Kid Hungry here: 🤍 Find my books and stuff here: 🤍 Here's Alvin Cailan's Chicken Adobo recipe from Amboy: 🤍 Here's my basic recipe: 2-3 (900 to 1350g) pounds bone-in, skin-on chicken thighs and drumsticks Kosher salt 1-2 tablespoons (15-30ml) neutral oil such as rice bran or canola A big pinch ground black pepper plus 30-40 whole black peppercorns 15-20 whole cloves garlic, smashed 1 cup (240ml) cane, coconut, or distilled white vinegar 2/3 cup (160ml) Filipino soy sauce (Japanese shoyu or a mix of Chinese dark and light soy sauce works) 5 ounces (145g) brown or palm sugar A few bay leaves 1. Season the chicken lightly with salt. Heat the oil in a wok or large saucepan over medium-high heat until shimmering. Add the chicken and cook, turning occasionally, until lightly browned all over, about 4 minutes. 2. Add the ground and whole black pepper and the garlic and stir to combine. Add the vinegar, soy sauce, sugar, and bay leaves, and stir to combine. 3. Bring to a boil, reduce to a bare simmer, cover, and cook for 30 minutes. Turn chicken, cover again, and cook until the chicken is fully tender and the sauce is thick and coats the chicken pieces in a dark glaze. Serve the chicken and sauce with rice.

Easy Chicken Adobo Recipe Details: 🤍 Ingredients: 2 lbs chicken sliced into serving pieces 1 piece Knorr Chicken Cube 1 head garlic crushed 6 tablespoons white vinegar 6 tablespoons soy sauce 1 1/2 teaspoons whole peppercorn 5 pieces dried bay leaves 1/2 cup water 1 teaspoon sugar 4 tablespoons cooking oil Instructions: Combine chicken, 1/4 of the total amount of garlic, whole peppercorn, dried bay leaves, soy sauce, vinegar, and water in a cooking pot. Cover and let boil. Stir and make sure that all ingredients are well blended. Add Knorr Chicken Cube and sugar. Stir. Cover the pot and cook for 10 minutes. Turn the chicken over and cook the opposite side for another 10 minutes. Set aside. Heat oil in a clean pan. Saute remaining garlic until it turns light brown. Pan fry the chicken for 1 minute per side. Pour the adobo sauce into the pan. Boil until it reduces to half. Transfer to a serving plate. Serve with warm rice.

I’ve finally learned how to cook my Dad’s delicious Pork Adobo! If you’ve never had Filipino adobo, it’s tender pieces of meat, braised in soy sauce and vinegar. It’s savory, tangy, incredibly flavorful!!! And best served over rice! Pork adobo 3 lbs boneless pork shoulder country style ribs, trimmed of excess fat and cut into 1 inch cubes* 8-10garlic cloves, smashed and rough chopped 1/2 cup Kikkoman soy sauce 3/4 cup vinegar 1 1/2 cup water Pepper 1/4 cup vegetable oil Directions Place pork, garlic, soy sauce, vinegar, water and vegetable oil in a pan and add black pepper. Do not stir! Bring to a boil, cover and let simmer between medium and medium low heat for 20 minutes. After 20 minutes remove lid and stir. Cook for another 30 minutes, stirring occasionally. Remove lid and increase heat to high. Continue to cook until sauce has reduced and thickened, about 3-5 minutes. Serve over rice. Note *I used about 3.75 - 4 lbs boneless pork country style ribs = 3 lbs after trimmed of excess fat. Instagram 🤍

In a large ziplock bag, add chicken, pork belly, soy sauce, vinegar, and enough water to just cover the meat. Gently shake to combine and marinate for 6 hours, or overnight. 2. In a large Dutch oven over medium-high heat, add a touch of oil and marinated pork belly (reserve marinade). Cook until the fat from the pork renders and for the pork to begin to crisp. 3. Then add chicken and cook until chicken is golden brown on all sides. Add garlic and lightly brown, then add peppercorns, bay leaves, and reserved marinade. 4. Add more water if needed. Bring to a boil, then reduce to a simmer and cook for 30-45 minutes. 5. Taste and adjust with more vinegar, soy, and sugar (if desired). Continue cooking until the chicken is juicy and falling off the bone. 6. While the chicken is cooking, make the garlic rice. In a large, deep pan on medium heat, add oil and garlic. Cook until garlic is golden brown, then add rice. Cook for 3-4 minutes, stirring to incorporate garlic and oil into the rice. 7. Serve adobo with garlic rice, spicy vinegar, and shrimp paste.

Today we’re making a Filipino dish called adobo. If you haven’t tried it before, you need to add it to your list. It has so much flavour and the pork comes out extremely tender and juicy. Pork Adobo Recipe Ingredients - 1.2kg pork belly - 5 tbsp coconut vinegar - 2 tsp sugar - 4 tbsp dark soy - 4 tbsp light soy - 8 cloves garlic, diced - 4 bay leaves - 400ml water - Spring onion for garnish Method 1. Dice your pork belly into roughly 3cm cubes. 2. Marinate your diced pork belly with the white vinegar, sugar, dark soy, light soy, garlic and bay leaves for 1-6 hours. 3. Drain the pork belly from the marinade. In a large heavy-based pot, brown off the pork belly so you have good colour on all sides. 4. Once your pork belly is nicely browned, add the marinade to the pot with the water. Bring this to a simmer, turn low and cook for 1.5 hours or until the pork is super tender. 5. For the last 30 minutes, take the lid off the pot so the sauce reduces and becomes nice and sticky. 6. Serve your pork adobo with rice and some optional spring onion as garnish.
